We believe that the starting point for rejuvenation of the body, mind and spirit is through the foods or drinks that we consume. We offer an abundance of fresh fruit, vegetables and whole foods at La Crisalida Retreats, packed full of vitamins and minerals to bring health and vitality to your body.
At La Crisalida Retreats we prepare and serve tasty, fresh, wholesome nutritious food that is intended to support our bodies, without using any dairy or meat products, sugars or processed food. Our nutritionist has designed a tasty four-week menu that helps to cleanse and rebalance your body whilst delivering maximum nutrition. We use seasonal products where possible, grown or sourced locally, so the menu is typically Mediterranean. All food is served fresh, prepared and cooked daily on the premises, with care and loving attention from our talented team of chefs.
Our menus change twice per year for summer or winter. Summer menus tend to be lighter and include more raw dishes, whereas the winter menus include more cooked foods. All food is included in the cost of your retreat. Sample menus for each of the meals are listed below. Our vegan retreat recipes are available on our blog page and can come direct into your email inbox every month by signing up for our newsletter.
Breakfast is served buffet style, so you can help yourself. We offer homemade muesli, homemade granola (with gluten free options available) served with your choice of a variety of soya yoghurts, rice milk or soya milk. A fresh fruit salad is also prepared daily using seasonal fruits. Optional extras for you to add include goji berries, chia seeds, ground flaxseed and raisins. All breakfasts are accompanied by a fresh juice.
You may also choose to have a juice breakfast. (All breakfast juices are made with avocado, unless requested otherwise). Read more about juicing here.
Think colour, taste and texture and you have lunch here at La Crisalida! Lunch is served buffet style, so you can sample all of the six dishes on offer, and eat as much or as little as you choose. Every lunch menu includes at least one protein and one carb dish. We serve soup in the colder months (we have more than 40 different soup recipes, including carrot and coriander, Mexican bean, “cream” of mushroom and Malaysian squash soup.
A sample lunch menu is: veggie bean burgers, guacamole dip, courgette toppers, sweet potato and beetroot salad, raw tabbouleh, served with a spinach and rocket salad with a hazelnut dressing.
You are welcome to eat with fellow guests in the dining room, in any of the outdoor seating areas or take your plate to your own apartment or terrace area. Juicing is also an option.
The evening meal is a sociable occasion, where we gather to enjoy food and company of fellow guests. Meals are served Spanish family style, around our large tables (outside during the warmer weather), with bowls on the table from which to help yourself. Six dishes are served, plus salad dressing and always include a protein and a carb option. Some of the evening dishes that we serve include: red peppers stuffed with millet, vegan paella, Vietnamese rice noodles, carrot and lentil dhal, lentil “bolognaise”, mousakka and chickpea saffron and spinach stew.
Twice each week (Tuesdays and Friday nights) we offer a dessert, like raw carrot cake, chocolate-orange “cheese cake”, or spiced pear crisp with banana “ice-cream”. We also offer occasional treats for special occasions – of the healthy variety of course!
Discover our stunning menus that combine colour, texture, taste and variety, every meal. In the afternoon we provide you with a small fresh juice to freshen up. We encourage you to drink at least 3-5 litres of water per day whilst at the retreat as this helps with elimination of toxins and helps to keep the body well hydrated. Filtered water is available for you around the retreat. There is also a wide range of herbal teas, including green tea and hot water so you can make yourself a hot drink whenever you chose. Seasonal fruit is available throughout the day for you to choose. The food at La Crisalida is included in the cost of your retreat.
The foods that we do not serve include: bread, dairy (milk, cheese, cream, yoghurt), eggs, caffeine (no coffee or black tea), alcohol, processed foods and refined sugar. We also do not use salt. These foods all place extra stress on our body systems, so by cutting them out for one week, or a few days, the body has the opportunity to rebalance itself. We can cater for coeliac and others special diets (gluten-free, nut-free, food intolerances etc) – please let us know at the time of booking if you have special requirements.
