This tasty yellow pepper juice brings a ray of sunshine into your juice glass and makes it a delicious juice to enjoy any time of the day.

Peppers are typically in season and most readily available in the summer months, so August is a great time to add more peppers into your juice (or your meals).

Bell peppers are rich in vitamins and minerals, so nutritionally they make a good addition to any juice. The bright yellow colour is an indication of the high levels of carotenoids in yellow peppers. Yellow peppers contain high levels of vitamin C, ideal for support your immune system and overall health. They also contain tryptophan – this is needed to produce melatonin, which is something that helps to promote good sleep.  

Sunshine yellow pepper juice recipe

Serves: 1

2 apples
½ yellow pepper
½ courgette
2cm lemon

Optional extra: blend half an avocado


Simple – wash everything beneath cold running water. If you have a strong juicer and are using an unwaxed lemon, leave the skin on, otherwise trim off the outer skin of the lemon, leaving the pith. Then put through your juicer!

If you are using avocado, remove the skin and stone, then add it together with the juice for 30 – 60 seconds, until smooth.

To maintain your equipment, we recommend that you wash your juicer and blender soon after use.

If you wish to enjoy a version of this juice, with no fruit, then here is our suggestion:  

1 yellow pepper
½ courgette
3 carrots
2cm lemon
