Restful Sunday - Cauliflower juice recipe

This month, let´s take a different look at cauliflower and broccoli and try something new. This month we are serving them raw, in a glass, instead of cooked on a plate, to enjoy the many nutritional benefits that fabulous these veggies offer.

Health benefits of Restful Sunday cauliflower juice

Combining carrots, cauliflower, courgette and broccoli into one juice glass gives your body a massive boost of vitamins and minerals. To name a few… you get beta carotene from the carrots (great antioxidant), vitamin C, folate and niacin from the cauliflower, vitamin K and potassium from the courgette and B vitamins, iron and calcium from the broccoli. Vitamin C helps the body to absorb iron and B vitamins in particular, as well as antioxidants, so by combining these vegetables your body will take even more benefit! Restful Sunday: cauliflower juice recipe

Serves: 1
Calories: 221


2 florets of cauliflower
3 large carrots
½ courgette
2cm slice lemon
2cm broccoli stem (if using florets have two good size florets)


Assemble all of your ingredients. Give them a good wash in cold running water. There is no need to peel anything, unless your lemon is waxed (in which case cut off the outer skin of the lemon, leaving the pith behind).

Put the veggies through your juicer – remember to put the lemon in between the veggies so that it goes through your juicer more easily.

Pour the juice into a glass then wash your juicer. Drink your juice and enjoy!

Variations – add apple
Carrots can be quite sweet so hopefully you will enjoy this juice as it is. However, if you are new to juicing, you might want to add in one apple, instead of two of the carrots. This will bring a little more sweetness to the juice.
