Our juice this month is called “Red eye no more” – a fabulous carrot juice recipe. I gave it this name as carrots are said to be great for eye health! It is also a lovely red colour, due to the combination of carrot and beetroot. Carrots are naturally sweet so this is recipe creates a pure vegetable juice, with no need for added fruit.
Carrots are a great source of beta-carotene, which is an antioxidant. Beta-carotene is needed by the body to create vitamin A. Insufficient vitamin A can lead to eye problems including cataracts and blindness, so drink up that carrot juice!
Although the recipe includes avocado, you can easily miss it out. Avocado makes the juice more substantial, which is great if you have it for breakfast or if you are feeling really hungry. Red eye no more: Carrot juice recipe
1 small cucumber
2cm unwaxed lemon
First make sure you wash the carrot, beetroot, cucumber and lemon beneath cold running water. Remember to use an unwaxed lemon – if its waxed, you can trim off the wax, or soak the lemon in hot water until the wax washes off.
Juice the carrot, beetroot, cucumber and lemon. Then pour the juice into your blender, add the avocado flesh and blend for 30-60 seconds. Pour into a glass, wash your juicer and blender, then drink.
