As we head into September, apple season arrives, so this month we are sharing our tasty parsley and apple juice recipe. Autumn in the northern hemisphere is a wonderful time of year for apples, as many different varieties start to come into our shops and supermarkets.
This month our focus is the joy of learning so we thought we would share one of our breakfast juices, in which we combine apples with parsley. If you have not tried parsley in a juice before, then you are in for a treat! Our tip for getting the most flavour and juice from the parsley is to wrap the herbs inside the lettuce leaf (like a wrapped parcel) and pop it through your centrifugal juicer. (If you have a masticating juicer then you shouldn´t need to do this). As we are also using a blender to combine the avocado, you can also choose to blend the parsley – if you do this, we suggest chopping up the parsley before adding it into your blender.

Parsley and apple juice recipe
3 cm broccoli stem
3 cm white cabbage
2 – 4 lettuce leaves
2 cm lemon
Large handful of fresh parsley
Remove any stickers from the apples then wash all the fruit and vegetables beneath cold running water, making sure to clean the lettuce. You might want to remove the outer edge of the lemon (if you are using a waxed lemon or have a lower power juicer). Wrap the parsley inside the lettuce leaves (like a parcel). Then juice the apples, broccoli, cabbage, lettuce / parsley parcel and lemon, collecting the juice in a large jug.
Add the avocado piece into the jug and blend it using a hand-blender, for about 60 seconds, creating a lovely creamy consistency.
Wash your juicer and blender, then drink your juice.
Parsley and apple smoothie recipe
To make this recipe into a (large) parsley and apply smoothie, you will need:
1 apples, stem and core removed
1 large floret of broccoli (or you can use 3 cm broccoli stem)
Chunk of white cabbage
2 Lettuce leaves
Handful of fresh parsley
1 tbsp lemon juice
1/3 avocado, skin removed
150 ml non-dairy milk
Remove the core from the apple and pop it into your blender. Add the broccoli, cabbage, lettuce, fresh parsley, lemon juice and avocado. Pour in the non-dairy milk and pop the lid on. Blend for about 60 – 90 seconds, to make a smooth consistency and make sure the parsley is well mixed in. Pour into a glass.
Remember to wash your blender before drinking your smoothie (makes it easier to clean!).
