One of our popular morning breakfast juices is this New Day juice. Combining apple, carrots and spinach, with the creaminess of avocado, makes it a lovely juice to wake up to. It tastes great and at the same time gives your body plenty of vitamins and minerals, including, Vitamins A, C and K, as well as iron, magnesium and folate.

How do I juice spinach?

We use large leaf spinach here at La Crisalida juicing retreats, when we want to include spinach in our juice. A masticating juicer will probably give you the best results (the most juice etc) but not everyone has one of these. Centrifugal juicers sometimes find spinach leaves difficult to handle, meaning you can sometimes get very little juice out of your spinach (it just spits out the leaves into the waste container which can be very frustrating). However, most people only have a centrifugal juicer, so if you find that your juicer doesn´t like spinach, you can make a spinach sandwich – slice an apple in half, sandwich the spinach leaves (rolled up) in the middle of the two apples halves and push it down through your juicer. If you can only find small leaf spinach, it might be better to add it to your blender, instead of juicing it. That way you keep all the nutritional value of the spinach.

2 apples
2 carrots
Large handful of large leaf spinach
2cm slice unwaxed lemon
1/3 avocado


Give all your fruits and vegetables a good wash beneath cold running water. Then put the apples, carrots, spinach and lemon through your juicer. Pour the juice into your blender, then add the avocado and blend for 30 to 45 seconds, until everything is mixed in and it looks creamy.

Always wash your juicer and blender before drinking your juice to maintain your juicer in a tiptop condition.

Low fruit or no fruit option

If you want to reduce the amount of fruits that you are consume in your juices, try our alternative low fruit (half the fruit of the original recipe) or no fruit options, swapping in veggies as alternatives:

  • Low fruit New Day spinach juice: Replace one apple with one or two large carrots.
  • No fruit New Day spinach juice: Replace the apples with two extra carrots and ½ courgette. Add a little extra spinach for added iron!
