Juice Recipe - Red-dy Steady Go

Now that we are in late summer, it is great to use veggies that are ripe to create a savoury juice for your lunch or dinner. This is a salad in a glass!

Juice Recipe: Red-dy Steady Go


2 large ripe tomatoes
½ cucumber
1/3 large red pepper
2cm slice of lemon


Remember to rinse all of your ingredients in cold water, then put everything through your juicer. This juice only has 127 calories, so it is light and refreshing. The addition of cucumber brings freshness to the juice, you could also use courgette (zucchini), which would add more creaminess. The red pepper brings added colour to the juice, as well as added flavour.

If you want a more filling juice, pour the juice into your blender, then add half an avocado and blend well to make a smooth creamy juice. You can also add a dash of chili or half a teaspoon of spicy paprika (or cayenne pepper) to bring heat to the juice.

Many guests at the retreat are amazed at how different fresh tomato juice tastes to that poured from a shop-bought carton or bottle. So, watch when you juice your tomatoes, as this juice looks and tastes quite different.

You could also pretend that this juice is gazpacho – cold soup that is commonly served here in Spain in the summer – and eat it using a spoon!
