This fresh and nutritious juice is a great start to any morning. Spinach and apples are great sources of dietary fibre, so help to keep your digestive tract nice and healthy. If you are following a vegan diet, spinach is a good source of iron, particularly when combined with another food item high in vitamin C (like apples and carrots). Some authors claim that spinach as anti-cancer properties – getting all your vitamins plus antioxidants in juices can help to keep our body more alkaline, which certainly helps to keep our bodies in good health. We serve this juice at breakfast but you can enjoy it at any time of the day.
Large handful of spinach – large leaf if possible
2cm slice lemon
Place the apples, carrots and lemon through your juicer. If you can find large leaf spinach, you can juice it – we suggest cutting the apple in half, put half an apple in first, then fold in the spinach and top with the other half apple. This will help to push the spinach through the juicer. If you can only find fresh new spinach (small leaves) then you probably won’t get much juice out of them, so it is better to add them into your blender.
Pour the juice to your blender and add in the third of the avocado.
If you prefer to have a vegetable juice, you can swap the apples for courgette or cucumber.
