This is one of our new evening recipes and we created this whilst having a little laugh at the whole “vegan food is rabbit food” thing. Some people don´t like celery, and it might be an acquired taste, but it is worth persevering with it.
At 158 calories Bunny Heaven is a filling, savoury low calorie juice making good use of seasonal veggies. There are lots of minerals available in this juice, including sodium from the celery (and spinach is you use it) (read this months article on salt here) and iron (parsley is a great source, as is spinach). For vitamins, the carrots give your body a boost of beta-carotene (antioxidant), and the cauliflower brings vitamin B3 (niacin) and folate.
Juice Recipe: Bunny Heaven
3 large carrots
1 stick celery
Chunk of cauliflower
Small piece of lemon
Handful of parsley
Handful of lettuce (iceburg lettuce is good for water content, or maybe use kale or spinach for a super green boost)
Simply wash all of your ingredients and place in your juicer. If your juicer struggles with juicing parsley or spinach, then you can chop these items and blend together in your blender with the juice from the other veggies.
