As summer continues and the temperatures stay high, you might like to try this lovely cucumber fresh juice recipe to help rehydrate your body. Cucumbers are traditionally at their best in the summer months – go to any allotment in Britain and you will find them growing abundantly around May to July. Here in Spain we have a longer growing season (lucky us). By adding cucumber to any freshly prepared juice you will bring lightness and freshness, and maximise hydration.
Cucumbers have a high water content (they are over 90% water), so they are a great addition to any juice when you want to hydrate your body. Additionally, cucumbers are low in calories, so are great if you are watching your weight. Here at La Crisalida Retreats we can find two main varieties of cucumber – the traditional long cucumber found in most supermarkets, as well as a shorter prickly version, with a thicker skin, the Spanish pepino. Both look very similar inside, but we need to remove the skin when eating pepino in our salads (for a juice we can leave the skin on).
This recipe also contains celery – another salad vegetable that contains a high proportion of water. If you are not a fan of celery, we suggest that you start with a small piece and gradually build it up over time. Our “Cucumber fresh juice” makes a refreshing lunch or afternoon juice.
Cucumber fresh juice recipe
2 pepino (2 small Spanish cucumbers or one large standard cucumber)
1 stick celery
1cm chunk pineapple – you can leave the skin on
2cm slice of unwaxed lemon
This is really easy – wash all of the ingredients and then place them through your juicer. Drink and enjoy!
Remember to wash your juicer first to look after the blade (leaving the juicer means that all the bits harden onto the blade, making it much more difficult to clean).
Low fruit or no fruit juice options
For a different type of juice you can leave out some (low fruit) or all of the fruit (no fruit), creating a more vegetable based juice. Our suggestions are:
- Low fruit Cucumber fresh juice: Replace half an apple with one pepino or ½ cucumber.
- No fruit Cucumber fresh juice: leave out the apple and pineapple, replace with an extra pepino, one more stick of celery and 2cm stem of broccoli.
