A big glass of beetroot juice is enjoyed by many of the guests here at the retreat and our beet-tastic juice lives up to its name – fantastic!

In this article we share the recipe for our popular beetroot juice. We know that some people prefer to enjoy pure vegetable juices (no fruit) so we have included the ingredients for that too. AND, because some of you prefer smoothies, you can try the beet-tastic smoothie recipe too!

Juicing tip: Remember, if you have centrifugal juicer, we recommend that you blend in the mint, rather than putting it through your juicer – a centrifugal juicer tends to spin very fast, which causes the small mint leaves to get thrown out and dumped into the waste bucket, rather than juiced.

Beet-tastic beetroot juice recipe

 Serves: 1

Calories: 189

1/2 raw medium beetroot
2 apples
1/2 small cucumber
2cm unwaxed lemon
Handful fresh mint leaves

Method

Wash your vegetables beneath cold running water. Remove any stickers from the apples. Trim off the outer edge of the lemon (if you are using a waxed lemon or have a lower power juicer). Then juice the beetroot, apples, cucumber and lemon, allowing the juice to run into a large jug.

Add the mint leaves into the juice in the jug and blend it using a hand-blender.

Wash your juicer and blender, then drink your juice.

Make a pure vegetable beetroot juice

1/2 raw medium beetroot
1 small cucumber
1 small courgette
2cm unwaxed lemon
Handful fresh mint leaves

Follow the same method as above.

Beet-tastic smoothie recipe

To make this recipe into a (large) beetroot smoothie, you will need:

1 apple, core removed and cut into quarters
1/2 raw beetroot, cut into large chunks
1/3 small cucumber, cut into large chunks
2 tbsp lemon juice
Handful fresh mint leaves
200 ml rice milk or other non-dairy milk

Remove the core from the apple and pop it into your blender. Add the beetroot, cucumber, mint leaves and then pour over the lemon juice and non-dairy milk. Blend for about 60 seconds, to make a smooth consistency. Pour into a glass.

Wash your blender then drink your smoothie.
