As we start another new year, our minds often turn to making a fresh start in areas of our life, including our health and diet. Our delicious antioxidant boost juice is not just tasty, it is also packed with vitamins and minerals that give us a healthy kick-start, from the inside.

Antioxidants are natural compounds found in food and there are thousands of them. You will be aware of the most common antioxidants: Vitamin C, Vitamin E and beta-carotene. They are abundant in most plant foods, so drinking juice made from fresh fruit and vegetables is great for our health. You can read more about this in our new article: juicing for health.

We’ve said this many times on this blog, berries are little powerhouses of nutrition. In these colder winter months, frozen berries are really handy to add into your juice. Allow them to defrost for a short time, so they are starting to soften, then add them into your juice by blending. Red peppers are high in carotenoids and vitamin C.

This version is our lower fruit option. If you like a sweeter-tasting juice, you could increase amount of apple and remove the courgette.  

Antioxidant boost juice recipe

Serves: 1

1/2 apple
1 courgette
1/2 red pepper
2 cm lemon
Large handful berries
Blend: ½ avocado

Method

Wash the apple, courgette and red pepper beneath cold running water. For the lemon, if you have a strong juicer and are using an unwaxed lemon, leave the skin on, otherwise trim off the outer skin (leave the pith). Then put through your juicer, allowing the juice to collect in a large jug.

Rinse (or defrost) the berries. Remove the skin from the avocado, and the stone. Add the berries and avocado into the jug with the juice and use a hand-blender to combine – it will take 60 seconds to create a delicious creamy juice, with a smoothie-like texture.

Remember, to maintain your equipment in tiptop condition, we recommend that you wash your juicer and blender soon after use.
