To celebrate 10 years of health and wellbeing here at La Crisalida Retreats, we are sharing our top 10 favourite plant-based recipes.

Since we opened in 2013, we have created and made hundreds of plant-based dishes for our guests to enjoy. We have so many recipes to choose from, it was challenging to come up with this list.

For the full ingredient list and instructions on how to make each dish, click on the link to the recipe which is published on our health and wellbeing blog. Most use the basic items we have in our kitchens – a hand-blender and/or food processor is useful for a couple of recipes.

1. Chickpea Caesar salad

This Chickpea Caesar salad is a new recipe to the retreat and it´s a fantastic plant-based version of the favourite Caesar salad recipe. The dressing is made from cashew nuts and nutritional yeast (plus other ingredients). Even if you are not a fan of chickpeas, you will enjoy this recipe! We also suggest that you make the dressing and enjoy it on any salad leaves, as it stores well in an air-tight container in the fridge.

2. Millet burgers

Millet burgers have been a staple on our menu for years. Millet is such a versatile grain, high in protein and other nutrients. Making millet into a burger is easy and the overall effect is to have a delicious crunchy outside, with a soft inside. These plant-based gluten free millet burgers complement any lunch or dinner meal.

3. Thai no-peanut peanut sauce with raw vegetables

A favourite on our summer menu is our raw Thai no-nut peanut sauce with vegetables. Thai peanut sauce is a traditional dish but as many people have peanut allergies, we decided to create one using almonds instead, which can be enjoyed by more people. Fresh coriander and ginger make this a super tasty dish. We list our preferred vegetables for this recipe (courgette, carrot and broccoli), but feel free to add any vegetables or salad items in which are on sale in your local market – the crunchier the better. It is a great addition to any Summer menu.

4. Lentil shepherds pie with sweet potato and parsnip mash

Our hearty lentil shepherds pie is a dish of heart-warming comfort food, ideal for those cold nights when you want to snuggle up beneath a blanket. We love the combination of sweet potato and parsnip in the mash – if you can´t find sweet potatoes then normal white potatoes are fine too. This is a dish you can prepare in advance when you have some time, and then pop into the oven when you are ready to eat.

5. Vegetable yellow curry

Any list of plant-based recipes has to include a cracking curry, right? Our vegetable yellow curry is delicious. The ingredient list is quite long, but don´t let that put you off – it really is quite simple to make. You only need a small amount of the curry paste to make this dish, so we recommend making a larger amount of the paste and then freezing whatever you do not need. No need to buy fresh coriander and it go to waste – make a portion of this paste! It then makes a quick and tasty meal but simply adding vegetables and coconut milk.

6. Mulligatawny soup

Soup is a main stay of our Autumn, Winter and Spring menus, so we had to include a soup on our top 10 favourites recipes! This mulligatawny soup recipe is ideal for those cold days, where a hot and filling bowl of soup is needed to warm you up from the inside. One bowl is filling and nutritious, no bread or anything necessary.

7. Broccoli, tofu and cashew nut stir fry

Tofu is often a common ingredient in plant-based and vegan food. Some of our guests tell us that they hated tofu before trying it at the retreat! Our broccoli, tofu and cashew nut stir fry is a delicious way to enjoy tofu. This recipe delivers great taste, plus it is low in fat and high in plant-based protein. We use firm tofu and like to marinade it before cooking to give it some flavour.

8. Blackbean, avocado and sweetcorn salad

The colours of this blackbean, avocado and sweetcorn salad are simply wonderful at any time of the year. Inspired by Mexican flavours you can throw this dish together in minutes, so long as you have some cooked blackbeans ready. Most of the dish can be made in advance and kept in the fridge. However, avocado starts to turn brown once the inner flesh comes into contact with the air. Sprinkling the avocado with lemon can help to prevent it browning. We suggest adding the avocado just before serving and stirring well.

9. Rice balls

The perfect recipe to use up any excess cooked rice, our rice balls recipe is quick, easy and tasty. This recipe is our Mediterranean version, but you can easily swap the herbs and spices to give variety. I personally love these rice balls with fresh coriander, lime and ginger, but you could add curry powder, or add more onion and sage instead. Remember, when making the balls, you do want to see the rice inside – if you blend the rice completely, you will end up with a dense and heavy ball (not very nice). We tend to grill our rice balls, but you can also bake them in the oven. They are great for picnics, but also to add variety to any meal.

10. Sweet potato chocolate brownie

Desserts always come at the end of the meal, so we include our healthy version of the comforting chocolate brownie. It is made with sweet potatoes and yes, it does include chocolate! The smell is divine whilst the brownie is cooking and they are great served from the oven, or made and enjoyed later. Store in an airtight container, in a cool place (fridge is fine). You can also freeze them – just remember to remove them from the freezer to defrost for a couple of hours before eating.
