We love our Friday evenings, when we gather to chat and celebrate over a cocktail or two. In true La Crisalida style, we look to nature to produce a beautiful alcohol-free version of this classic daiquiri, suitable for all the family. All you need is a blender and some cocktail glasses. It’s perfect for Christmas for all of the family.
Large handful of frozen strawberries
1 tbsp rice syrup (or other sweetener, like agave syrup)
1 tbsp Lemon juice
Few handfuls of ice – crushed if possible
Bottle of sparkling water
Few large ripe fresh strawberries for decoration
Allow the frozen strawberries to slightly defrost. Then place them in your blender, with the rice syrup and lemon juice (plus some fresh strawberries if you have some). Blitz. Add the rice syrup and ice and blitz a little more. Then add the sparkling water. Taste. Add more lemon juice and/or rice syrup according to taste. Pour into a cocktail glass and decorate with a sprig of mint and a slice of strawberry on the side.
We use a mix of frozen and fresh strawberries (depending upon the season – in summer its all from fresh) and you can also use a mixture of berries if that’s what you have in your freezer. Rice syrup adds sweetness to this cocktail – you can replace this with agave, honey or other liquid sweetener. Decorate with half a strawberry, or maybe a small sparkler! Enjoy.
